CT3- Culinary Techniques- Preparing Entrées

This course teaches culinary principles and techniques for preparing meats, poultry, fish, sandwiches, dry beans and peas, and pasta, rice, and grains.

Culinary Techniques for Healthy School Meals has been translated into online courses featuring all 15 lessons plus the video lesson demonstrations. The online courses use the lessons and video demonstrations as the basis for self-guided training. All 51 video demonstrations are incorporated. Each course includes Culinary Practice activities to be done on the job with the assistance of the foodservice team and manager. The courses use interactive games and scenarios to support the learning. Certificates of completion are provided.
