An investigation of the principles of management and organizational behavior needed for leaders of school nutrition programs. Topics include management theory, managing human resources, marketing, communication, leadership theory, financial data analysis, productivity, governmental regulations, and quality assurance programs. This is a 15-week course equivalent to 16 semester hours.
